8 Eggs
1 Brown Onion (diced)
Handful of Shredded Ham (or bacon, chicken etc)
1/4 Cup of Milk
1/2 Teaspoon of Oil (plus extra to grease muffin pan)
1/2 Teaspoon of Baking Powder
1 Cup of Grated Cheese
Salt and Pepper

All measurements and temperatures are in Australian Metric.

You was in my prayers every night. My mom ( 87 years ) made a hard surgery in her spine and in my list of prayers was she, my friend Taty and you. Now I will not ask, but thank God for bringing all of you back to me and very well.

I've made this several times. The first time I forgot the oil in with the eggs and they stuck badly in the muffin pan .. the second time I forgot the baking soda but didn't really notice any difference .. now I make them once or twice a month and everyone loves them. Thanks and keep these great recipes coming.

I'm so glad you're back in the kitchen and feeling better David. In the meantime, I was sitting on the beach today reading a romance novel about a caterer and she cooked muffin tin omelets - I thought to myself, "I would like to know how to make these" - and voila! here you are.
