msg doesn't do anything to you. People just think themselves sick. Apparently if I eat four plates of food at a buffet, I'm allergic to msg because it makes me sleepy and thirsty. not because I just ate 5000 calories and a shit load of salt in 40 minutes.

You should try making simple Indonesian fried rice. just lots of shallots, garlic, MSG, chilies, sweet soy sauce, salt. it just feels authentic and yummy....

MSG is a STAPLE in my kitchen. Im going to be honest, I use a dash of it for almost every dinner I make for my family. It truly does add a special umami flavor that you can’t get from salt. It just brings out the flavor of whatever you are cooking. I use it in curries, I use it to make fried rice, I use it to make spaghetti sauce, I use it for pot roast or stir fry or even Korean food. I use it to marinade meat like ribs and burgers for grilling. I add it to roasted/grilled/sautéed vegetables. I use it on seafood. I use it even in fresh tomato salads or fresh cucumber salads in the summer time with all the beautifully delicious and sweet tomato and eggplant and peppers and cucumbers from our garden. It truly makes everything taste better and is NOT bad for you. You are using a dash of it to make a meal to feed a meal to feed a family of 5-WITH LEFTOVERS!

TLDR: there's nothing wrong with MSG, there's something wrong with my body. I hate to admit this because I know I'll be attacked for it, but I am (medically diagnosed) sensitive to MSG and I hate it. When I was young I had no problems eating large quatities of MSG (like my favorite cool ranch doritos) but as I got older I developed the sensitivity. I can't eat things like doritos or cambpells soup without feeling like an elephant is sitting on my chest and struggling to breathe. Even things like parmesan cheese, dried shitakes used for stock, and sundried tomatoes will cause a mild reaction for me (flushed face, rapid heart beat, etc). I can have small quarities, but too much will "zap" me, as my family calls it. There's nothing wrong with eating MSG, but unfortunately I can't have large quantities without an ER trip and a nebulizer treatment lol. For anyone else out there who missing MSG, you're not alone.

Well, that was fast! People are so funny about that. There are so many food cranks in the US, you can hardly give this away. More funny is that MSG has been on the market for way over 100 years! GENERATIONS of people have enjoyed it and in fact it's now a little old fashioned. Snacks and Ramen and other industrial food products mostly use the Super-seasoning MSG plus (I+G), which you can buy in different forms, mostly from Korea. "Miwon" say. The Inosinate plus Guanylate is powerful and expensive and not really handy to use. The product you want is MSG plus I plus G mixed up as super seasoning, or all that mixed with salt as super salt.

Yes, MSG is not bad per se, it just works like salt, and like salt and other condiments, just make sure everything should be in moderation

I prefer to include MSG which make the taste better and also reduce sodium intake. Everyone should have chicken stock, ajinomoto, oyster sauce, hondasi, tsuyu, tuna sauce, dasida. A little bit of those can upgrade the tasty into another level

Monosodium glutamate (MSG), also known as sodium glutamate, is the sodium salt of glutamic acid. MSG is found naturally in some foods including tomatoes and cheese in this glutamic acid form. MSG was first prepared in 1908 by Japanese biochemist Kikunae Ikeda, who tried to isolate and duplicate the savory taste of kombu, an edible seaweed used as a broth (dashi) for Japanese cuisine. MSG balances, blends, and rounds the perception of other tastes. MSG, along with disodium ribonucleotides, is commonly used and found in stock (bouillon) cubes, soups, ramen, gravy, stews, condiments, savory snacks, etc. The mainstream media did a disservice to Asain Americans by not talking about how widely used MSG is in prepared food in the US.
