This is THE BEST Food Wishes recipe ever. It is perfect. I made it today (after two days of prep) and it was SPECTACULAR. Two comments: even if you do not have a paper panettone cake mold it is no problem to line a 9 inch spring form pan with a double thickness of buttered parchment paper making sure to give it a high collar and extends 3-4 inches above the edge of the tin - you will need the extra height for expansion. The other point to make is to be sure that you can somehow suspend the panettone upside down after baking because it will collapse a little if you do not. . . . Now, a hole in the counter is going a bit far but you can always engineer to suspend it over a bucket or an overturned stool using very long knitting needles or extra long bamboo skewers. The only other comment is that you may need to add a little bit more water to step one if your sourdough starter is not very runny.
I can't tell you how thrilled I am to have this recipe! My whole childhood the panettone at Christmas was so special. The ladies would sit around wondering how such a soft but stretchy texture could be achieved....in the days before the internet such complicated recipes were the purview of experts only. Now, in an 11 minute video anyone can be an expert! Bless you Chef John! I am your fan forever. Isa

Thank you for this. It means a lot to my kids to have panettone at Christmas every year. It was a tradition that their father shared with them. Sadly we lost him to cancer this year. Now I will never worry about not finding it for them.

I have used this recipe every year since it was posted, and got amazing results each year. This amount of dough will yield 4 smaller/taller panettone’s. I bought the molds through Amazon. I inverted them over sauce pans and salad bowls. Special gifts for special people. 🎄✅

Thank you❣ I have always wanted a light & airy Panettone recipe.

My dear 92 year young friend (now passed) had a recipe for a more dense Panettone bread. She had no actual measurements for the ingredients & it took me a while to work it out but I finally did it & & told her, now every time I want to make her recipe for her special 🍞 bread it would always turn out right.
Watching you make this bread made me think I'd best make a double batch, one wouldn't last long 😁. My husband loves his toasted & topped with orange marmalade. It's amazingly delicious! 🙆‍♀️🙋‍♀️

Chef John, thank you so much for demystifying the making of panettone- it's my dad's favorite thing in the world (I've watched him eat a slice- toasted- every day until it was gone for every Christmas breakfast I can remember), and since I seem to have more time than money this Christmas, I've been thinking of making it for him as a gift. "The Mount Everest of bread" description that I, too, saw on a baking blog was very discouraging- I'm an experienced baker and have made plenty of bread, but making an enriched, filled, sweet sourdough?! Yikes. I should have known that you would have a way to make it delicious and NOT crazy complicated- I have been following you on AllRecipes even before YouTube was a thing and your recipes are always delicious and reliable. I'm going to make this for my dad- I know he will enjoy and appreciate it even if it's not perfect (but I've got plenty of time to practice). I hope that you have a wonderful and safe holiday season!
