Make sure to add a roof so that your villagers don't turn to witches by lightning.

The wheat farm will actually produce bread and wheat seeds, not wheat and wheat seeds. To get wheat you need the middle villager to be a farmer as well, because farmers only share wheat with other farmers. The wheat shown is from the farmers sharing between them, not to the middle villager. Bread takes much more time because the wheat farmer have to "process" the wheat into bread first, then get filled and then share.

***HOW TO MAKE WHEAT WORK***

To outline the steps relevant to this farm:

1. Create named beetroots to fill the villagers inventory. For example, "Beetroot 1", "Beetroot 2", "Beetroot 3", etc. For this farm, you'll need to do this up to "Beetroot 8". You'll require 5 of numbers 1-6 (these will go to each villager) and only 1 of 7-8 (this will only go to the middle villager. Fill their inventories BEFORE putting them into the farm to avoid any pains with them picking up items. As a side note, the villagers should not already have things in their inventory (you can check this by running the command /data get entity @e[type=villager, limit=1, sort=nearest])

2. Give each farming villager a wheat seed and one wheat. Since they never fully give away their inventory, they will only ever be able to pick up seeds and wheat, and since their inventories are now completely full (if you did step 1 correctly), THEY CANT MAKE BREAD!

3. Finally, the most important step, the central villager also needs to be a farmer, or else THE FARMING VILLAGERS WONT TRY TO GIVE HIM WHEAT. As you are placing him in, simply place a composter next to him (where the hopper minecarts will go), then trade with him once, then remove the composter. This will ensure he never loses his profession.

and that's it! This will at the very least make this farm compatible with wheat. I've been running this on 1.21 (Java) and after afking overnight, yielded a full double chest of wheat (and sometimes seeds when they break the crops closest to the hoppers).

However there are a few QOL changes that should be made to this farm, regardless of what you're farming:

1. Place 8 trapdoors at eye-level around each glowstone to prevent the farmers from composting their items.

2. Either add a roof over the entire farm, or add lightning rods around the farm to make sure the villagers don't turn into witches (after going through all of this, it sucks major ass to see all your progress get erased). THIS IS NOT RARE, IT CAN AND LIKELY WILL HAPPEN IF YOU DON'T DO THIS STEP.

3. I'd recommend adding ladders around the farm to make it easier to move back and forth between villagers without risking them running out.

Here's a trick: Make a pillar of hoppers part of one of the walls near the center of this build: Then when you want to stack these farms on top of each other, you just point the hoppers surrounding the middle villager into that pillar.

Unless something has changed, villagers never exchange wheat and seeds!
The only way you could of gotten this was from some right beside a hopper.
Villagers turn wheat into bread before exchanging that.

its ntot about the farm designs i think its more the fastest and easiest way to actually build it is what makes your vids so good.

great tutorial, built it and the items just stacked up on the farm. should've used rails underneath to pick the items up, I tried that and it worked

@Skulkercraft For wheat you can still use the design in the video, but you need to add minecart hoppers running underneath. I've ran similar design as shown, but managed to fix the wheat portion with minecart hopper.

Use a hopper stack for more storage, this fills up fast. I use this for carrots and potatoes then I keep replacing composters till all the farmers want to trade carrots and potatoes. Trade them back the carrots and potatoes and watch the emeralds stack up. Beetroot does not perform as well as carrots and potatoes, and wheat pretty much requires a different design.

Once I have an iron farm I tend to just cover the bottom of a farm with hoppers all pointing into chests. Drops will be way lower if there's no villager to "share" with, but I'm fine with the low rate as I don't need much - most of the food goes to breeding more villagers after all 😅. I personally only eat salmon due to all the fishing I do.
Anyway, I really like this design because it can pretty easily be upgraded with bees.
