For anyone wondering sodium citrate is a citric acid salt typically made by fermenting molasses or other sugars containing citrate with a specific fungus, perfectly safe to eat.

I know some people get worried about food additives but it's not something like the lake food colours that you might want to avoid, it's just a slightly *alkaline* salt that's good for emulsifying.

Edit: it's basic (alkali) not acidic 🤦🏼‍♀️

So my mistake making a Nacho Cheese sauce wasn't that I used Gouda.
My mistake was leaving out the Sodium Citrate.

If you don't have the sodium citrate, you can also use corn starch. All you really need is a binding agent
