I often tell students that I’m going to “lie” to them by oversimplifying (similar to how physics teachers “lie” about gravity as a force instead of explaining general relativity). I then tell them that a B-natural means something slightly different than a C-flat in a similar way that-even though they all mean an olfactory sensation-smell, odor, and aroma mean something slightly different. In very over-simplified terms, a flat accidental will tend to move down, so the C-flat would move down to a B-flat. B-natural tends to move up in the context of C Major, and so will often move to a C-natural.

I then let them know that, in a similar way that we think of gravity as a force because it is a useful construct in understanding interactions in the physical world, it’s easier to think of C-flat and B-natural as basically the same note. After all the discussion, students have the basic facts, and those that are excited to learn more will ask more questions, and we can need out on chord structures, melodic vs harmonic functions, etc. Students who are not excited hopefully take away that they can think of the notes as the same, but should know they are different.
