Yama Seafood is among NYC’s top vendors when it comes to albacore, bigeye, yellowfin, and bluefin tuna. Director Nobu Yamanashi and his team begin their days at 3 a.m., breaking down tuna from Spain, Mexico, and Japan. I have 0 idea how I got to this video. But I am SO IMPRESSED with the guy that just knows exactly what every type of resturant wants and plans it all out. That is something that is earned and is not easily done at that.

I love how interconnected the fish business is. I remember watching the video in regards to the sushi king (that guy with the big sword) and watching all those Michelin star restaurants that rely on getting these quality products.
