Baked Sushi (Sushi Bake) Simple and easy

Ingredients:
8 large headless shrimp stir fry seasoned w/ salt/black pepper
1 1/4 cup cooked salmon pan fry or air fry
8 sticks imitation crabs (1 cup 1/2 cups)
1/3 cup mayonnaise
1 TB sriracha sauce (more if you want spicy)

3 1/2 cups cooked medium grain rice
1 TB rice vinegar
Pinch of salt

Items to assemble:
Tray, I’m using 8 1/2”x 8 1/2” glass pan
Seaweed snack sheets
Furikake rice seasoning (any flavor of choice)
Rice from above
Protein mixture from above
Mayonnaise
Sriracha
Unagi sauce
Massago
Green onions (optional)

**Saving for self**

*Prep protein:*
1. Cook raw protein (shrimp, salmon) over olive oil with pinch of salt/black pepper
2. Remove cooked shrimp from heat and dice (6 pieces, devined/peeled)
3. Remove cooked salmon from heat, peel the skin, and dice (1 slice or 1 1/4 cup)
4. Shred and cut imitation crab (8 sticks or 1 1/2 cups)

*Protein Mixture*
Place cooked/diced protein into a bowl and add:
5. A Pinch of Salt
6. Kewpie Mayo (1/3 cup)
7. Sriracha (1 tbsp)
8. Cream Cheese (2-3 ounces)
9. Masago Capelin Roe (to taste)
Mix and combine (optional: squeeze mixture with hands)

*Rice Mixture*
10. Cooked White Medium Grain Rice (3 cups)
11. Rice Vinegar (1 tbsp)
12. Pinch of Salt
Gently mix without breaking the rice

*Assemble in an 8.5 x 8.5 baking dish:*
13. Evenly layer *Rice Mixture* in baking dish and press down
14. Add an even layer of *Protein Mixture* on top of the rice

*Drizzle/top with:*
15. Kewpie Mayo
16. Unagi Sauce
17. Sriracha
18. Furikake
19. Masago Capelin Roe

*Remember: Add ingredients to taste*

-Bake at 350 degrees for 20 minutes.
-Remove from heat and allow to briefly cool.
-Enjoy and eat with seaweed.
