Let's face it. There are some things that you just HAVE to have. Like pepperoni on pizza. Not to mention PIZZA (that's coming in a couple days). This pepperoni is NOT a source of protein, just so you're aware. It makes a great topping for pizza, sandwiches, etc.

Ingredients:
(Seasoning Blend)
Pinch of Salt

(pepperoni)
Seasoning Blend (see above)
1 teaspoon Red Wine
1/4 Cup Water (you may need to add a touch more)
Additional Wheat Starch
Light Spray of Oil

I was following your method closely and wondered when the mixture would become sausage shaped as you did in your sausage video. I was pleasantly surprised when you broke out the cookie cutter. That was the ah ha moment for me and now I will be making these beauties! I wondered if you like Shakespeare as I listen to classical music like Mozart's Non Piu Andrai and found a composer named Roger Quilter who introduced Mistress Mine, a take on Shakespeare's sonnet. Perhaps you might like it.

Wheat starch ? Is that the same as VWG ?

Excellent. You have a new subscriber. I just watched a video about cancer-causing foods by Dr Mike Hansen, and pepperoni was one of them. I was dismayed, because I love pepperoni, but this is going to be my home-made version from now on.
