*PEPPEAFRONI* *(PEPPERONI)*
*INGREDIENTS*
*350g Vital Wheat Gluten
*150g extra-firm tofu (organic when possible)
*2 tsp pink sea salt
*2 tsp course black pepper
*5 tsp crushed red chilli flakes (preferred heat level)
*3 tbsp black mustard seeds
*3 tbsp fennel seeds (lightly crushed)
*4 tsp smoked paprika
*1 tsp garlic powder
*2 tsp onion powder
*2 tbsp Soya sauce
*2 drops hickory liquid smoke extract
*150mls Vegan red wine
*100g cooked and grated cauliflower
*40g broccoli cooked and grated
*Instructions*
Wrap tofu in a clean towel and set something heavy on top – like a iron skillet – to press out liquid for 1hr. Freeze for 3hrs or overnight. Julienne it with a sharp knife.
Blend mustard and fennel seeds, and set aside.
Now add everything in the food processor besides vital wheat gluten, couliflower, broccoli, tofu and blended seeds. Once blended thoroughly add the rest of the ingredients beside vital wheat gluten.
Transfer the mixture into a mixing bowl.
Add the vital wheat gluten and mix.
First with a rubber spatula and then with your hands as it roughens.
Shape into a sausage. (See video)
Wrap it with a parchment paper, foil and then cling wrap.
Simmer for 1hr.
Let it rest for 30min.
