Three ways to preserve garlic:
Fermented garlic
Honey garlic
Korean Pickled garlic

Brine for Korean pickled garlic (for 2 pints)
2 cups soy sauce or teriyaki
2/3 cups rice vinegar
2/3 cup sugar
Heat until sugar dissolves - do not bring to a boil.

Thanks for the great video. I've watched many videos of preserving garlic and most of them warn about botulism and it frightens me. I recently did a small jar just in vinegar and it seems okay except that the cloves turned green but apparently this is okay. The vinegar is wonderful on salads and the garlic tastes great. Are all these botulism claims true? TIA.

Saw the answer, thanks heaps.
Brought heaps of garlic, but even in a net and dark cool place, they turned hollow after 3 months. Maybe the Melbourne weather 🤔
So will try your method.

When you make your hands into a fist, uncurl and they stay white or slowly return to pink...you’re low in Vitamin C. ... (timed-release is best) sorry, I know this doesn’t apply to your video, just noticed your hands....😊 but am saving this video which I found one of the best, very informative. Thank you!

I have been fermenting stuff for years and I know that you need salt. The garlic in water alone in my mind is something that is not safe. I do the honey garlic it's great for years.
