How can Protestants know the canon of Scripture?

I will say this, protestants have convinced me that there is no knock-down argument against sola scriptura in terms of it being self-refuting. I'm still not convinced it's true, or even a desirable sort of prolegomena, but refuting it is more difficult than just "bible not found in bible". That said, the "Jews were entrusted with the oracles of God" argument is, at the risk of coming off rude, extremely weak. What are the oracles? What does it mean to be entrusted? Reading this as strictly as, "the Jews were entrusted with the canon" is like when Catholics finding a church father saying, "Rome has authority" and being like "AHA! See?!" Also, I do think sola scriptura has a serious epistemic problem once Christianity became a universal religion. Arguably, we could say that the Jewish scriptures in the old covenant were identifiable enough because the Jews were a distinct and identifiable people. They were God's people so if scripture is written by God's people, well you just need to be convinced that the Jews are God's people and you know what scripture is. On the other hand, it's not quite so easy anymore to know who God's people are. Catholics disagree with Orthodox disagree with protestants disagree with Mormons disagree with Muslims all about what the canon is. If you want to say, "Well Mormons aren't God's people, so their canon is wrong" that calls the whole thing into question. You only know they aren't God's people because of the canon you chose, but you chose that canon because you don't believe they're God's people. It's incoherently circular. Personally, I don't see anyway out of this incoherent circularity without some appeal to something greater than just a nebulus idea of "God's people", there would have to be some kind of binding authority to establish who is and is not God's people. And so I don't think sola scripture is true.

9:43 Not a Catholic, but the fact that they felt that the Reformation made it necessary to outline what they saw as canon and declare it infallible suggests to me that they had an idea on the content and infallibility of their canon before that time that was assumed to be obvious and indisputable until someone actually disputed it.

That seems to be the way these things go, not just in Catholic circles:

Church: "Everybody knows XYZ"
Troublemaker: "On the contrary, if you look at it closely, you'll find that Xi Upsilon Zeta"
Church: "We affirm that XYZ, and if anyone says differently, let him be anathema."

This general structure of things tends to show up a lot regardless of the exact identities of "church" and "troublemaker" and regardless of whether XYZ or Xi Upsilon Zeta is the correct position.

I'm protestant, but I don't know if you're saying what you think you're saying. If the canon of scripture can be fallible, then that means there could be things in the bible that aren't meant to be, which makes part of the scripture fallible, and therefore NOT the living, inerrant Word of God.
