Created in 1946 in Hanoi, in response to the milk shortage at the time, this recipe is as much a dessert as it is a drink. And combines a delicious egg custard with Vietnam's second biggest agricultural export - coffee.

I was gifted a phin filter and was having trouble using it, after a couple videos I'm confident to try again. Here in Brazil we make this egg cream by mixing the same amount of egg yolks and tablespoons of sugar. It's an old recipe we call gemada.
