Love Zaatar - you can eat it just mixed with a bit of olive oil, dip your bread in it or use it in salads.

Mutabal : 400 g cooked and peeled aubergine flesh, 4 tbs well stirred tahini, 4 tbs fresh lemon juice, 1-2 cloves of garlic, 2 tbs olive oil, salt

Zaatar: Equal measures of whole coriander and whole cumin ( dry cook them for a minute or 2 and crush well), dry thyme or oregano, sumac, sesame seeds. Salt and chilly ( I used Aleppo chilly flakes)
