Keto friendly Ketonians perfect snacks

~Keto empanada Dough~

Step#1
2 Cups Almond flour
1 Tbsp. Baking powder
1 Tbsp. Sugar (MonkFruit/Stevia /Swerve)
2 Eggs
Mix dry together with eggs set aside

Step#2
3 cups mozzarella
2 Oz cream cheese
Melt together on the microwave or Stovetop making sure it is well melted together.

Step#3
Combine flour mixture and melted mozzarella mix together until well combined let the dough rest for 15 mins.

Step#4
flatten dough on the counter with Parchment paper using rolling pin shape to your desire size.
Egg wash before baking

Bake empanadas 380• for 20 mins.
Set timer for 10 mins after 10 mins rotate baking pan and set timer for another 10 mins. Check for brown color preference👍🏼

Beef Fillings:

Ground Beef ( GrassFed)
White round Onions ( Finely Diced)
Red Bell peppers ( Finely Diced)
Garlic ( Minced)
Oregano
Cumin
Salt n Pepper

Brown Ground beef in a skillet. Once beef is brown add Onions, garlic, bell Peppers, mix well with spatula cook until Translucent. Add cumin, oregano. Season with Salt and Pepper to taste. Stir through the filling and add 1/3 cup of hot water. Let it simmer for 2 minutes after simmering let filling cools down.
