Empanadas are a traditional Latin American dish that typically consists of a pastry dough filled with meat, vegetables, or cheese. However, traditional empanadas can be high in carbohydrates and not suitable for a low-carb or ketogenic diet.
But, there is a way to make a keto-friendly version of empanadas that are just as delicious as the original. Instead of using traditional pastry dough, a keto-friendly empanada dough can be made using almond flour and mozzarella cheese, which will make them low in carbohydrates and perfect for a ketogenic diet.
Ingredients for the dough:
1 cup almond flour,
1 cup shredded mozzarella cheese,
1 egg,
1 tsp xanthan gum,
1/4 tsp salt,
Ingredients for the filling:
1 lb ground beef,
1 small onion, diced,
1 small bell pepper, diced,
1 clove of garlic, minced,
1 tsp chili powder,
1 tsp cumin,
1/4 tsp salt,
1/4 tsp black pepper,
1/4 cup diced green olives (optional),
1/4 cup diced tomatoes (optional),
1/4 cup diced cilantro (optional),
Instructions:
1. Preheat your oven to 375°F (190°C).
2. In a large mixing bowl, combine the almond flour, mozzarella cheese, egg, xanthan gum, and salt. Mix until a dough forms.
3. Roll out the dough on a sheet of parchment paper. Cut out circles of dough using a round cookie cutter or a glass.
4. In a large skillet over medium-high heat, brown the ground beef. Drain any excess fat.
5. Add the onion, bell pepper, and garlic to the skillet and sauté until softened.
6. Add the chili powder, cumin, salt, and pepper and stir to combine.
7. If desired, add the green olives, diced tomatoes and cilantro and stir to combine.
8. Place a spoonful of the beef mixture on one half of each dough circle, leaving about 1/4 inch of space around the edges.
9. Fold the dough over the filling and press the edges together to seal the empanadas.
10. Place the empanadas on a baking sheet lined with parchment paper.
11. Brush the empanadas with beaten egg or melted butter.
12. Bake for 20-25 minutes, or until the empanadas are golden brown and crispy.
