On one occasion i was sight fishing for carp in a lake next to some people practicing with North African instruments.The soundtrack to landing the fish was crazy. I'll never forget that.

I remember hearing that if you cut the head off, and hang it upside-down by the tail to bleed out, it takes the gamey flavor away.
Supposed to make them taste more like sunfish.
Then they cube the meat to fry. That was an old Southern strategy for lean times.

Best way I've found is to put bread on your hook buy don't smash it bcuz u want it to float. It comes off easily but the carp cannot resist it!
