2. Rough Cut The Vegetables. Toss The Vegetables And Chicken Bones In EVOO. Place On A Baking Tray And Roast At 400°F Until Golden Brown. The Vegetables Will Take About 25 Minutes And The Bones Around 40 Minutes.
3. Once Golden, Put Everything Into A Large Pot And Fill With 1 Gallon Of Water. Add In Herbs And Bring To A Light Boil.

So true story I heard recently from my aunt about my ex brother in law making chicken noodle soup. He was boiling down the chicken til it was super tender. My aunt watched him literally pour the water down the drain! She asked him why he did that. His answer was that it was dirty water then proceeds to add chicken broth from the box he bought from the store which he said was the "good stuff" 🤦 my aunt had to teach him where chicken stock comes from. 😂😂😂 My brain still hurts!

Anytime you make anything that has scraps and/or bones but not enough for a decent batch of stock, freeze that stuff! It will save for a long time and you can make it later. Homemade soup stock is so worth it! Use it to make soup, stew, rice, etc. Almost anything that gets cooked in water can benefit from stock.
