Let it rise in your oven, just use your oven Light for Warmth.

Regarding proofing, I've always proofed my bread with a heating pad. I put a cookie rack over the heating pad and put my bowl or tray of dough on the rack and cover it with a dishtowel. Works great and it frees up the oven.

I made these last night and they're delicious!!! I measured my glucose 2 hours later, it was 85 and ketones were 1.5 and I ate 4 of them! Great job Victoria!❤🎉😊❤

Update on getting the cinnamon rolls to rise. I realized I was using instant yeast instead of active dry yeast. I skipped the preparation step for the yeast and put it directly into the perfect keto flour with 1 tsp. if sugar on top. I made the dough and the rolls, let them rise once and baked them. Worked perfectly. Thank you again for the perfect keto flour.

I couldn't wait until this weekend and made these cinnamon rolls last night. They really are very good and very close to the "real thing." My husband enjoyed them immensely. But most importantly of all, I really felt like I was baking again. I have always loved to bake and it's the thing I have missed most doing the low carb/keto lifestyle. It's not even eating the things I make, it's the baking process itself. It's always been cathartic to me. Thanks so much Victoria for sharing your creation with us. Bless you! UPDATE: Two days later and these cinnamon rolls (kept in a Ziplock bag) are still soft and moist.

I feel like I’m commenting excessively on this post (sorry 🤐) but I had to add that I did a couple of tweaks when making these…AND OMG SO DELICIOUS. I always find allulose amounts in most recipes aren’t enough… not sure if that’s a brand or lot thing, with what I have… so I generally almost double it. But biggest tweak (that I was soooo nervous to do, with them looking so beautiful) was a ‘success secret’ I’d seen on some ‘fancy chef kinda videos, ’ 🤓. Several recommended pouring heavy cream over the cinnamon rolls, after 7 minutes of baking. No idea why THAT moment. But I tried it, probably with about 1/3 cup of cream. And they really were divine! I will definitely keep that tweak. ❤ THANK YOU, AGAIN, FOR ALL YOU DO! ❤

We made these and they were amazing. I wanted something more like cinnabon. So I doubled the butter and the cinnamon mixture, and I rolled the dough out to a 1/8 inch thick long rectangle. Bingo!

Oh my goodness. I got that xantham gum and made these cinnamon rolls and everyone ate them and loved them. My daughter came home later than everyone and I told her to have one she took a bite and said they were so wonderful. Everyone was smiling when she said this isn't some of your keto junk is it? She's 17 and couldn't tell the difference. They were so good they all went the same day and I was asked to make them again 2 days later. GREAT JOB

I made these and they were good and didn't spike my blood sugar. Huge win. True confession though: when I was cleaning up after popping them in the oven. I discovered I had neglected to add the egg. They worked anyway.

You are a GENIUS! And your videos are awesome. So grateful. Your scientific approach to this process - and apparently inexhaustible commitment - have really made something great. Brilliant, in fact. I am literally happier… like… all the time… ow that my ‘hobby/obsession, ’ suddenly results in such scrumptious successes… Instead of about 80% failure rate, before YOU! My husband thanks you too! 🤩🥰💞

I made these rolls and they were so delicious! Although you have created newer flour mixes, this flour mix still out performs anything other YouTubers have available. My non-keto family members were so impressed when I told them it was sugar free, wheat free, gluten free, and low carb. Thank you for your all the wonderful recipes you post and your commitment to this community! ❤ 😊

This is a wonderful recipe! Thank you Victoria!! I placed my silicon pad down with a piece of parchment on it and then another piece of parchment on top of the dough and rolled. The technique worked great and it didn’t have to do any flipping. When I peeled the top piece off, I placed it in my 9 x 13 baking dish for proofing.

I made these today. I made a double batch of your flour and a half batch of the cinnamon rolls. I like adding lupin flour. I used 1/3 lupin, 2/3 almond flour. My rolls were not touching when put in to proof. They were touching when I took them out. They are the best keto cinnamon rolls I have made. I used a mix of brown lakanto and white allulose for the filling. If I had a brown allulose I would have used all of that for the filling. I can't wait to try another recipe with your flour mix. Thank you.

I found your channel and my jaw dropped. I made your self rising flour and immediately made the cinnamon rolls. I used the oat fiber I had on hand but it has a strong smell and a beige color. The cinnamon rolls are still good and I will eat them all lol but I ordered one of your suggested white oat fiber brands and cant wait for it to come in to try this again. I've been working my way through all your recipes and will try everyone of them. I think you've discovered the holy grail of keto with your recipe.

Have you ever tried making bagels with the self rising flour? That's a project I can't wait to try. Thank you Victoris for sharing with the keto/diabetic word!!

P.S - I used a silicone swiss roll pan lighy sprayed to roll my cinnamon rolls..worked like a dream!

I made these and was so excited! They were just ok. They tasted like whole wheat which is fine but not what I was expecting. The icing was not good at all but that is probably just my personal taste.

SO looking forward to making these! I live across from a Cobs bakery and have restrained myself from eating a cinnamon roll for up to a month at a time, due to gluten and sugar reactions in my body. If this tastes as good as it looks, you will have made my day/month/year!

The aches I experience will be gone! Keto food/diet/way of eating has reduced my pain levels so much that I welcome this recipe!!!

Thank you.

My husband and I made this dough and split it in half. With one half we made the cinnamon rolls and with the other half we made apple fritter bars. I know apples aren't technically keto but they're one my husband's favorite foods & he doesn't need all the junky ones so he wanted me to try using your dough for them & it worked beautifully.

For the apple fritter bars I cooked 1 apple in 1 T of the sweetener & cinnamon mixture. Then I divided the dough for the apple fritters in half & pressed half of it + about 2 T cinnamon & sweetener mixture into a parchment lined dish. After cooking & cooling the apples I layered those on top of the dough with cinnamon and sweetener then I mixed the remaining cinnamon & sweetener mixture with the other half of the apple fritter dough and then crumbled it on top of the cooked apples. We proofed it & the cinnamon rolls at the same time then baked according to your directions. After baking I made a simple icing with powdered Monkfruit Sweetener and powdered BochaSweet + heavy cream & a splash of vanilla. I made your cream cheese icing for the cinnamon rolls. I drizzled the apple fritter bars with the icing w/out cream cheese & put the cream cheese icing on the cinnamon rolls. Hubby loved both & pronounced them delicious.🎉 I will definitely be making both again! Thank you so much for all your hard work and for sharing your delicious recipes with all of us! I'm looking forward to trying lots of other recipes with your flour blends! God bless you! ❤️
