This is my oldest Japanese knife, and the one that really started it for me!

Moritaka is one of the oldest and most recognisable knifemakers of Japan. This particular knife is Aogami-Super (AS) at the core, made in a San Mai construction.
Handle is walnut and black pakkawood.

they are one of the smiths who is willing to do forge welding instead of using steel factory product (ie. pre-laminated steel)

I just bought a Moritaka Gyuto 210mm, and out of the box it cut pretty much like this one did. I was a little disappointed because my Moritaka Nikiri was spooky sharp right from the start. Would be interested to know how you like this knife.
