My Recipe:
Ingredients (for 8 servings)

2 tablespoons vegan butter, to coat the pan

Dough
2 cups almond milk, at room temperature
½ cup vegan butter, melted
¼ cup organic sugar
1 packet active dry yeast
5 ½ cups flour, divided
1 teaspoon salt

Filling
¾ cup vegan butter
¾ cup brown sugar
2 tablespoons ground cinnamon

Icing
1 cup powdered sugar
2 tablespoons almond milk
½ teaspoon vanilla extract

I’ve made your vegan cinnamon rolls before and taken them to work. I didn’t tell anyone they were vegan because I’m pretty sure no one would eat them. Within a few minutes they were gone and no one could tell they were vegan. These are absolutely delicious. Well done ❤!

Mix your brown sugar/ cinnamon filling into the 3/4 cup soften butter that way you can just spread the filling evenly on the dough.

If you put a jug of boiled water in the oven with the dough it will rise without switching the oven on. Works a treat

Ive been making your recipe for years, it truly is the best cinnamon bun vegan or not. They are always a hit. I like to add a little butter/ brown sugar and cinnamon to the bottom of the pan to caramelize the bottoms. Incredible.

Helpful tip when working with yeast: A lot of times when yeasted baked goods don't rise, it's because the yeast has died. An easy way to make sure your yeast is still active is to leave it in the warm milk/sugar mix at the beginning for about 5 minutes (this is called blooming the yeast), and if it is foamy and frothy, then that means your yeast is still good and you can go on with the recipe! If it doesn't get foamy, then you can start over with new yeast before you waste more ingredients. Also, common reasons why yeast doesn't activate is that it is really old or the blooming liquid is not the right temp. A good way to know if you have the right temp is to put your finger in the liquid, and if it doesn't feel warmer or cooler than your finger, then you should be good to go!

Honestly, yes. Watching someone who isn't already really practiced at making bread make bread WOULD be great. Because usually when people make bread making videos you get the comment about "Oh, I know it seems really intimidating at first, but once you get used to it it's super easy!" And I'm sure that's true. But if we've never done it before, we don't have that confidence yet. Show me what it might look like that first time while it's still intimidatingly new. Let me see it work out even though maybe it looks like it won't, etc. THAT would actually alleviate my fears and help me feel less stressed in the moment if I decide to try it myself.

Seeing your honest reactions (like here with the yeast and worrying about if it's going to rise or not) makes me feel so much more at ease about trying things, truly. Because it's a great reminder that uncertainty is normal, things can still work out even if they don't look perfect, and even if they don't you can just try again and it isn't the end of the world.

I vote for more baking videos. I like how the cinnamon rolls turned out. Plus you can now put your new food processor to good use. I'm actually looking to buy one as well. I want one with the removable blades though. Carefully considering which food processor to buy is a very adult experience.

Gotta be careful if you use Miyokos butter without warning people. I made my mom’s cookies using Miyokos butter and wasn’t thinking about allergies. My best friend is allergic to nuts (including cashews) and I forgot that the butter is made from cashews. Luckily it wasn’t an anaphylactic reaction 😅

Homemade cinnamon rolls are a Christmas morning classic. I prep on Christmas Eve day and then bake them in the morning while everyone is opening presents. I’ve made more batches of vegan cinnamon rolls than “traditional”. So easy to make vegan even if you are starting with a “traditional” recipe.

That moment when you see them all fat and risen in the pan before baking. You just know you’ve nailed the recipe.

my way of making a more waistline-friendly option is whole wheat flour @ 65% hydration (2/3 of the flour autolyzed at 100% hydration, then adding 100g dry flour), with the seasoned sugar "spread" being a mix of blitzed reconstistuted (and steamed) dates + ginger + cinnamon + blackstrap molasses + coconut cream
