Thank! You! I've spent the last several years infuriated watching YouTube "chefs" lecture people on why they need to "season with salt" the minute food comes out of a fryer, only for them to stupidly pour huge flakes of kosher salt on the food that does nothing but bounce off.

we use maldon at our restaurant, but crush it in your fingers as you sprinkle it and that sticks well

We make them almost the same way in the restaurant where i work, only difference is that we leave the skin on, and we use a mix of 80-90%of salt and 10-20% of black pepper.

Chuck your maldon in the robo for a few mins so they can coat the chips (with the addition of a few sprigs of rosemary and garlic powder)

I do the same thing but I do it in the oven instead of the fryer. It takes about 1/2 hour to get a crispy and golden color.
