They are not preventing themselves from laughing at all.  They did a good job in this scene and it is a good movie.  It is directed by Sidney  Lumet who only took 2 or 3 takes per scene.  Sidney has directed some of the best Hollywood movies and is legendary.  He only hired actors who had proved themselves in previous films.  Trust me if River and Martha were preventing themselves from laughing, Sidney would have made them do it over again.
