Cacio e pepe is a favorite in our home. @JKenjiLopezAlt recipe on @seriouseats is a wonderful example of how a four ingredient pasta can really deliver big flavor and great texture. I think I first heard about this recipe on an old episode of special sauce with Ed Levine that Kenji was on—possibly the first episode, it’s been a while 😬

For this recipe, we boil our pasta in just enough water to help concentrate the starches, and toast freshly cracked pepper in olive oil to help it bloom.
