Sorry for the crappy audio. Not sure what happened there. Jetlag. I made some cacio e pepe for myself tonight when I got home after an 18-hour door to door trip.

IB4 "It's not cacio e pepe because you added olive oil!"

I don't care. I added olive oil because I like it and I like blooming the black pepper in it \so its flavor is a little deeper. Sometimes I also add butter. I'll call it what I want, you call it what you want, and we can both call it delicious, ok?

Kenji, I made this after deliberating for over an hour about what I should make for dinner. I didn't know how hungry I was, what I felt like eating, and my brother was coming home and I knew he would need to eat as well. After stumbling across your cacio e pepe video, on a whim I decided to make it (I didn't have Pecorino Romano so I just used the end of some Parmigiano Reggiano) and by god was it perfect. And it's foolproof too! If you can make pasta and stir you can make this, and it has black pepper and cheese in it so what's not to like!

That said mine did split a bit, so I guess I just need to stir it more vigorously and thoroughly emulsify the pasta water and oil. Fantastic recipe all round, thanks so much!

You haven't done one of these in a while. I think the 1st person view is so creative. I also love when your dogs show up, it makes it feel really genuine.
