Put washed grapes into a sanitized 4L bottle. Fill the container about 1/3 full with the fruit. Once you have the proper amount of fruit in the jar remove it and chop the fruit and replace it into the jar. Add 3/4 - 1 cup sugar and fill to the top with filtered water. Cover with a cloth or coffee filter secured with a rubber band. Set in a cool place out of the sun (NO COMMERCIAL YEAST NEEDED). Let sit for 5-7 days stirring once everyday. Keep tasting this everyday as the natural yeast develops. When the flavor reaches the desired taste filter out the fruit and put into pressure safe bottles. Add 1/2 tsp sugar to each bottle, cap and shake well. Counter ferment for 3 days and move to the refrigerator and chill well (for a couple of days so they don’t explode when you open them). Produces very carbonated natural soda without commercial yeast.

PSA: if you haven't tried cotton candy grapes (what we call them in Canada), he is not lying about them. They are delicious and well worth the extra cost. I like to freeze them for just a bit and have them as a snack. Everyone should try them if they get the chance.

Keep in mind that you are producing an alcoholic product! The sugar ferments to alcohol and a side product of the fermentation is co2 which shows itself in carbonation within the drink because it cant escape, nevertheless i‘m certain it‘s amazing!

You can carbonate grapes directly leaving them with (not touching) dry ice in a cooler with a tight lid for a few hours.

Lemon+ mint + sugar. Make strong tasting tea to your liking, add extra spoonful of sugar. In the bottle, add two large raisins. Bottle the tea when luke warm wirh few lemon zests and keep about a week in the cellar (4* C) until the bottle clears. No yeast needed. Awesome summer drink :)

i just tried to make some last night, i put too much yeast in so the fermentation happening so fast that the bottle become overpressured, i have to bring the bottle into the other room then open it, all of the grapes and juiced shoot out up to the celling, hit my face directly too
