I heard a theory once that the reason why Odin gave up on collecting the stones was because in his quest for the stones he realized he had to sacrifice the one thing he loved (for the soul stone) which at the time could have been Hela. This realization led him to his change of heart from conqueror to peaceful protector.

I would very much like to see these other stones. I always thought the stones worked in tandem with each other, the gauntlet and whoever wears. The Space Stone ensures the Snap happened all across the universe, the Time Stone ensures it all happens at the same time, The Power Stone gives the Snap the power to reach everywhere, The Mind Stone ensures the will of the Snap to occur and the Soul Stone ensures to pick half of the universe at random (or perhaps not at random?)

Thanos doesn't have limitless power, the reality stone doesn't change matter universally. He can only manipulate matter with the stone, not create. Which is why he doesn't create double the recourses, and he can only manipulate reality if he keeps his fist closed.

Actually the Space & Time Stones allows the user to Manipulate & Control Space-Time and they aren’t limited to those abilities you mentioned and it is an Ability not a Power
