I you have reflexes like IP Man then you can defeat a muay thai guy with wing chun. But I still doubt, because muay thai people have a great body conditioning. They can take 100s of hard hits but still be able to fight.

Muay Thai is definitely better to beat Wing Chun. But Donnie’s skills is just too good he can still use it to beat him.

That Sparta Kick at 1:98 to the Muay Thai fellow was an epic scene... But I don't know what this guy's body is made off and survived a flying fall down them steps. And then he stands up and continues (probably there was a cut there but hey - that fall was legit and he is a total legend).
