Omg thank you for addressing this issue. I prefer to use fresh rice for all the same reasons. I'm a cook if I have overnight rice i always microwave it before stir-frying.

I prefer fresh rice as well. Less water is a must, but soaking the rice before cooking for 30-60 minutes before cooking is also important. It ensures that the rice cooking process is done evenly throughout each grain. Love your family videos! Such a joy to see family traditions be passed down to the next generation. Beautiful family! This is because the starches in rice.are a type of resistant starch.. after being cooked, the starch chains partially break down, but when they are cooled, they can connect again. Never the same as before, but they can. This is why refrigerated rice can have a "crunchiness" to it. Reheating it in the microwave can break down some of the starch chains again, but not much, and they've already been changed so much, they are resistant to breaking down again. That's why fresh rice is so soft, but even reheated rice is still firm. This is also why overnight rice acts different from fresh rice. It's probably why he says microwaving it first helps.

Another key that i've heard was many prefer to use "steamed rice" (cooked using literal steamer) instead of rice cooker-cooked rice for the fried rice. Steaming dries the rice up a bit so it wont stick much and because it's fresh, the taste is better and fresher compared to leftover rice (which tends to be hard). Many restaurants supposedly use this method in their fried rice, resulting in fried rice that doesnt stick yet having freshness only found in newly cooked rice. Obviously this takes longer time and more labor intensive for us home cooks so leftover rice would reasonably be our best choice. Cheers!!

Spread out your fresh rice on a baking sheet if you want to cool it down a bit. Easier to work with and u dont have to plan a day ahead

Ok so i used to work at a pretty decent Thai restaurant and we used fresh rice. The key is to use the right rice and the rice cooker!!!! We used jasmine rice. Also you don't need much water for rice like jasmine. Your rice should be covered with warer and have like an extra half an inch of water on top of the rice.

Hey, love your content, but I think you need better instructions for the water to rice ratio here. Usually you need to put more water per cup of rice for smaller amounts of rice. For example if you need 8 fl oz for 1 cup rice, you might only need 12-14 fl oz for 2 cups, rather than 16 oz. This is because the water lost to evaporation doesn't scale linearly to the amount of rice.

Me, if I plan to cook fried rice from our left over rice I will put it on the fridge first. Bc I like the texture of left over rice fr the fridge in making fried rice.

This looked like 'golden rice' where you mix the egg and rice together and fry that so each grain of rice is coated in egg, comes out a golden yellow colour.

Even though he is an experienced Chinese chef, I totally disagree with his opinion that day old rice is either a myth or unnecessary. There is an issue rarely recognized regarding day old rice. Because day old rice is drier than fresh rice, the dry rice develops a toasty or carmelized sweeter and smoky flavor that does not happen with fresh rice. To me the more skillet or wok.browned smoky flavored day old rice gives it a superior flavor to fresh fried rice. I know this does not matter to Asian people, but to American people it is everything and why we love this version of fried rice. I know fried rice was created by Chinese immigrants approx 100 yrs ago. They introduced it to Americans and that is why we love it that way ; day old with a browned smoky taste. I realize that fried rice was not found in Asian countries until the 1980s. And no an entire bottle of soy sauce will not give the rice a smoky flavor. Any Asian restaurant that sells the Chinese-American day old smoky flavored fried rice will make more profits from American customers because we love this version the most.
