When you realise the whole purpose of this interaction for Itachi was to teach and inform kakashi and the other Leaf jonin about the mangekyo sharingan which is why kakashi could unlock his own mangekyo later.

Itachi is always talking about how important information was in combat yet here he is telling a whole group of people about the sharingan. Most likely because he knew how much of a threat Obito was to the Leaf. Every single thing this man did was calculated for the sake of the village.

In the entire show Itachi was the only one who consistently used the sharingan the way it was originally meant to be used: as unbeatable genjutsu

Sasuke went through an entirely pointless villain arc to learn from Orochimaru, just so he could be soloed by genjutsu regardless of what he learned, and only reason it did not happen because Itachi wanted to let him win in a specific way.

The only reason for an Uchiha to ever train anything other than sharingan based genjutsu is to survive until he can use it, or to get the upper hand against other Uchiha.
