Authentic Greek Beet Salad made in Thessaloniki, Greece (Patzaria)

Ingredients:
1 bunch of beets with greens attached
4 garlic cloves
1/4 cup olive oil
1/4 cup of vinegar or fresh squeezed lemon juice
Salt to taste
Preparation:
Clean the beets and leaves. Once clean, cut the beer bulb from the leaves. Set the leaves with the stems aside. Then fill a pot to boil the beer bulbs for an hour or until tender.
Once tender, add the leaves to continue boiling until the leaves and stems are tender. Just a few more minutes.
Optional: strain the beets and greens and save the water to drink later. Beer water is very healthy.
Place the beets and greens in a serving bowl as seen in the video. Cut the beet bulbs into chunks. Then cut the green stems and leaves in half and let cool before following this video.
Once cooled, you are ready to mix!! Enjoy!
