Pemmican is a survival food. It was invented by native Americans as a shelf-stable food that can be made easily with on-hand ingredients for long hunts. It’s not supposed to taste good, it’s supposed to keep you alive

For the pemmican, you gotta render out that beef fat until there is absolutely no moisture left in it. It needs to be dense like tallow, or you're asking for both bad flavors and bad shelf life (down to mere days rather than weeks/months).
Meat should be pulsed into a fiberous mess, not a cohesive muck. Berries and nuts are usually added whole/chopped rather than blended in. I could see why your pemmican turned out so gross lol.
