Foods like pork belly and ox tail were considered poor food a long time ago because it was the scraps the rich thought were dirty. When they discovered just how good those cuts were it was popularised and is now considered expensive food. Its crazy how stuff like that changes

I will never find anything more impressive than the human ability to find perfection in desperation. these people took the other scraps that they were given, the bottom of the barrel, the worst of the worst, and they turned it into food that can bring a grown man to tears, and I genuinely do not know of anything more impressive.
