You can phrase a double negation in various ways ("I do not not eat pizza"; "It is not the case that I do not eat pizza"). Both of these are logically equivalent with the proposition "I eat pizza" (they have the same truth values). You are right that it is more succinct to say, "I eat pizza", but when doing logic we need to keep a double neg (ie, ~~P) distinct from a simple proposition (ie, P). That is partly because double negations are logically unique (have different roles) from simple props.

How do you phrase a double negation? Would the double negation of "I eat pizza" be " I do not not eat pizza"? or "It is not the case that I do not eat pizza"? If so, then wouldn't it be simpler for the double negation of "I do not eat pizza" to be " I do eat pizza"? I am confused.
