5A range by 24 bit is approx 300nA resolution. And that is without using programmable gain. Everything is limited by how noisy their pre-amp fronted of ADC against range of voltages on current-sense resistor.

I got a similar laser and I turned it into a embroidery machine, usually they come with a dual processor board so you have to do some dirty hacks, but now is making nice patches!

i think M3 and M5 in the software for the laser engraver are probably G-Code designations for those operations

The laser might be 15w input but can't be above 6w out, since that's the rating of current highest power laser diode of that size

You enabled the adc on the Otii in the config window by the checkbox at the bottom under "current" :) it is off by default
