How to use sudo and su command (linux tutorial)

Whats the difference between sudo and su command? How can we use them properly?

I get this command  error dpkg was interrupted, you must manually run 'sudo dpkg --configure -a' to correct the problem. Could you possibility explain this to me?

need help with photorec, after a 2 tb  hard drive recovery  I encountered a problem, I do not know how to sort the contents of 4000 directory, because to go to each directory will take forever, must be a way out using wild cards, I tried and I failed, I tried Google it and I failed .
