Would you still take apart the panel edges and add an extra roof panel if you're not taking off the ridge cap?

I'm worried about getting a ridge vent if I go metal and want to keep the off ridge vents. I don't want risk of water or bugs near the ridge, so nice to see venting is possible on the roof.

I might suggest: dial down the music until your test viewers tell you they that they weren’t conscious that there was any music. Music should help to create a pleasant mood in your viewer but they should NEVER notice it. I had to fight the music to stay focused on your important words.
Also, you just can’t have enough close-ups when you do hand work. A picture is worth a thousand words. I really wished to have a peek at the underside of the vent as you had it installed in the panel, after you had cut those smart “safeties”, before you stuck it down.
But, after all, super work, and a new subscriber.

What is the brand of the blue ventilating underpayment, starting a new roof over SIPS panels and need a venting/drainage underlay for condensation

Don't get me wrong that's some beautiful sheet metal work. But I simply would have ran the back of it up underneath the ridge, cutting the hole a little bit higher, ran butyl tape around the perimeter, drill holes and pop blind rivets and then caulk the corners. That would look just as good last just as long and take half the time.
