Chicken:
600g chicken breast
1 tsp salt
1 tsp paprika
1 tsp oregano
1 tsp garlic granules
1/2 tsp cumin
1/2 tsp black pepper
2 tbsp olive oil

Pasta and sauce:
250g pasta cooked to al dente with 1 chicken stock cube
1 medium onion (finely diced)
15g butter
1 red pepper (~100g, finely diced)
2 padron peppers (thinly sliced)
4 garlic cloves (minced)
30g pepper paste
15g tomato paste
3 tsp oregano
1 tsp paprika
1 tsp sumac
1/2-2 tsp pul biber
1/2 tsp black pepper
1/4 tsp salt (will vary depending on how salty pasta water is)
300-400 ml pasta water
45g cream cheese

If you do it with a mince meat sauce (meatier ragu) you can also have a weeknight alternative to Turkish Mantı (Turkish dumplings) I do it all the time absolutely delicious. Serve with yogurt and melted butter + tomato paste.

I really like this kind of weeknight, one-pot recipes already packed with starch, protein, and veggies. I love middle eastern food, but I live alone and can't spend hours making shish kebabs and baba ghanoush.

As a Turkish guy, I approve! Beyti is not traditionally made with chicken but it's ok here, I got the point. If you don't have access to Turkish pepper paste but have Korean gochujang, definitely use that instead. Could be even better than the real stuff. Also, gochujang is more shelf-stable as it's fermented

Superb recipe! The whole family enjoyed it a lot and it was quick and easy to put together. It was such a hit that my toddler requested some for breakfast the next day, and said 'it smells so good. I like it. It smells good!' This is a kid who will not, 99% of the time, eat the same thing two days in a row. Thanks again, Obi! I bet it would be good also with a turkish kofte mixture.

Thanks Obi, I made this for dinner tonight and it was fabulous. The only change I made was substituting Greek yogurt for the cream cheese, as I didn’t have any. I used only one green chili simply because it was an insanely spicy one from my garden. I thought I planted serranos, but no serrano I ever met before could burn the house down.

A great alternative to the tomato paste and pepper paste are dried tomato powder and dried pepper powder, you can make them at home by dehydrating tomatoes and peppers (doable with an oven, obviously a lot easier with a cheap dehydrator) and blending the results, they're super easy to add to any meal and they last a very long time.

The loss of nutrients from the drying process is minimal, and since it's a powder that dissolves easy you can put it on any dish without really having to worry about how it'll affect the texture of it. Flavour wise it's functionally the same except even more concentrated, a small spoonful will basically get you a whole tomato worth of flavour and nutrients, it's great.
