its so fun to read through all of these comments, it usually starts with "oh but you need gluten, unless you are allergic to it", then there is some "smartass" that do whatever he can to convince everybody that gluten is bad for you.

I was googling a little and I found this info on Wikipedia: Xanthan gum may be derived from a variety of source products that are themselves common allergens, such as corn, wheat, dairy, or soy. As such, persons with known sensitivities or allergies to food products are advised to avoid foods including generic xanthan gum or first determine the source of the xanthan gum before consuming the food

Cool, I've only eve used Xanthan Gum as a viscosofier when mixing drilling fluids for oil and gas wells, interesting to see it used in a similar way for gluten free baking.

I actually did an experiment with an alveograph (it measures the elasticity, the strenght of the dough and how it will react with heat), using rice flour, cheakpea flour and zea flour( really low gluten flour) and my results were really disappointing. Bit with xanthan gum the diagram of the results was close the gluten doughs. So yes, big thumbs up. But I haven't tasted it....can you tell a difference when you eat it? Also I want to ask, with what kind of flours do you use xanthan gum with? Thank you

xanthan gum binds iron and starch with water and let the starch upsorbe the water.

Did I miss the part where she tells us how it works? She seems to only tell us the results of what it does, and it's not a very good demo at that. I've seen better, stiff egg whites tipped upside down in a bown over someone's head.
