Sweet & Sour Chicken
3-4 Chicken breasts
1 cup all purpose flour
1/2 cup of cornstarch
1 egg
1/4 cup egg whites or 1 extra egg white
1/2 tablespoon of granulated garlic
1/2 tablespoon of granulated onion
1 tablespoon salt
3-4 cups of canola oil
Take your chicken breasts and cut them into pieces then set aside. Now in a bowl, add your egg and egg whites and whisk together. Now In a separate bowl, add your flour, corn starch, granulated garlic, granulated onion, and salt. Give it a good stir. Next, take your pieces of chicken and place them in the egg mixture and then in the four mixture. Make sure to coat each piece evenly. Once you have them all dipped and coated set them aside. In a pot add your oil and place it on the stove top and turn your stove to medium low heat. My stove has numbers so I set mine to 3. It takes a little while for the oil to heat up. Once it does, add 6 pieces at a time to your pot and let them cook for 4-5 min. My chicken breading came out very light in color, it didn’t seem cooked, but they were. I made sure to take the temps on the first batch. Because the oil is so clean and they cook on a very low heat, the oil doesn’t get too hot and burn the breading. So don’t be fooled by the lightness in color of the breading. You don’t want to over cook the chicken. 4-5 minutes it plenty. Once they are all done, set them on a rack to let the oil drain from them. Now, you can make your own sweet and sour sauce, I didn’t today. I used a store bought sweet and sour sauce. So in a separate pan add some sweet and sour sauce, a dash of water, and a dash of soy sauce. Let the sauce heat up, then add your breaded chicken to the pan. Make sure both sides of the chicken pieces are coated. Let the sauce and chicken boil for 1-2 minutes and it’s ready to serve!!! Happy Eatz Everyone!!
