Cream of Celery Soup - NoRecipeRequired.com

This cream of celery soup recipe, brings the humble stalk of celery from a simple ingredient to the star of the show. I actually make celery soup pretty often, because the grocery store makes you buy this huge bunch of celery and I typically use one, maybe two, stalks. What about the rest? Well, combined with a few other ingredients, a onion, some chicken stock, etc...the rest of that celery can make a damn fine soup.

It's an easy soup to make, as you don't need to carefully chop or prep anything (everything eventually gets pureed) and it only takes about 30 minutes to cook on the stove top. For a slightly lighter version you can leave out the cream, but I love to hit it with a touch at the end, which gives the celery soup more texture and body than it would otherwise have. If you've got a simple sandwich or slide salad to go along with it, you've got a great meal.

Dave, if you get a chance, try growing celery this year.  Once you do, you'll never buy that sore bought garbage again.  Trust me on this.  And thanks for this soup recipe.
