I love myself a good decedent for dessert, but stealing fresh corpses at funerals is honestly starting to get too dodgy for me. Kudos to Gordon to keep the tradition alive!

Ingredients:

Butter (unsalted) - 1 cup
White sugar - 1 cup
Pinch of salt
Vanilla extract - 1 teaspoon
Eggs - 2 whole eggs
Baking powder - 1 teaspoon
Baking soda - 1/2 teaspoon
All-purpose flour - 2 cups (added in two stages)
Dried cranberries - 1/2 cup
White chocolate - 1/2 cup, chopped
Ricotta cheese - 1 cup
Cream cheese - 1 package (8 oz)
Granulated sugar - 1/2 cup
Eggs - 2
All-purpose flour - 2 tablespoons
Lemon zest - 1 tablespoon
Fresh raspberries - 1 cup
Black figs - 6, sliced
Rosemary - 1 sprig
Icing sugar - for dusting
Balsamic vinegar - 1/2 cup
Water - 1/4 cup
Sliced almonds - 1/4 cup

Instructions:

1. Melt the butter in a pan.
2. Add white sugar and a pinch of salt to the melted butter.
3. Whisk the mixture until it becomes lighter and slightly fluffy.
4. Add a teaspoon of vanilla extract to the mixture and whisk again.
5. Add two whole eggs to the mixture and whisk until they are mixed in.
6.Add a teaspoon of baking powder and half a teaspoon of baking soda to the mixture and whisk it in.
7.Add half of the all-purpose flour and whisk it in, then add the remaining flour and whisk again.
8.Add dried cranberries and chopped white chocolate to the mixture and fold them in.
9.Grease and line a baking tray with greaseproof paper.
10.Pour the mixture into the baking tray and smooth it out.
11.Bake the blondies at 180 degrees Celsius for 35 to 40 minutes.
12.Leave the blondies to cool down before slicing.
13.Leave the cream cheese out of the fridge for 5 to 10 minutes to soften.
14.Cream the cheese and sugar together.
15.Add eggs to the mixture bit by bit and whisk them in.
16.Add a couple of tablespoons of all-purpose flour and whisk it in.
17.Fold in fresh raspberries.
18.Grease a cake tin with butter.
19.Pour the mixture into the cake tin and tap it gently.
20.Dust the black figs with icing sugar and coat them with balsamic vinegar.
21.Make a caramel with sugar, butter, balsamic vinegar, and water.
Place the figs in the caramel and bake 22.them at 190 degrees Celsius for 10 minutes.
23.Serve the caramelized figs with ricotta cheese, lemon zest, and sliced almonds.

You should try replacing the cranberries with macadamia nuts.But your blondies are still way better than any thing the head baker where I worked was "teaching"me.(I already was more experienced than her.XD)I have grown figs.Green figs are sweeter, best for fresh eating while black figs are richer, good for desserts and drying.Good old Fig Bars are best with black figs.
