Greek Chicken Souvlaki Bowls

Ingredients
Tzatziki Sauce
Mediterranean Rice Pilaf
Supplies:
Air Fryer
Wooden Skewers for the air fryer
For the Chicken:
2 lbs (1kg) boneless skinless chicken thighs
1/4 cup olive oil
1/4 cup fresh lemon juice
4 garlic cloves, grated
1 tablespoons dried oregano
2 teaspoons salt
3/4 teaspoons ground cumin
1/2 teaspoon freshly cracked black pepper
1/4 teaspoon or more crushed red pepper flakes
For the Vegetables:
1 red onion, cut into wedges
2 bell peppers, cubed
1-2 zucchini, cut into rounds
olive oil
salt
black pepper
For the Potatoes:
5 Russet or gold Potatoes, peeled and cut into wedges (about 1/2 inch thick)
3-4 tablespoons olive oil
salt, to taste
freshly cracked black pepper to taste
1 teaspoon garlic powder or to taste
1 teaspoon dried oregano
Instructions
Marinate the Chicken: Cut the chicken thighs 2-3-inch wide pieces.Combine the chicken and all of the seasonings, olive oil, and lemon juice into a large bowl and toss together until coated. Set aside to marinate for 30 minutes or overnight in the refrigerator.

Cut the veggies about the same size as the chicken and thread the chicken and vegetables through skewers and place them on a baking tray. Pour remaining marinade over the skewers. Drizzle some more olive oil onto the vegetables and season lightly with salt and pepper.

Bake the Potatoes: Place the potatoes into a large bowl and drizzle with olive oil. Season with salt, pepper, garlic, and oregano (if desired). Toss together until coated. Transfer the potatoes onto a half-sheet baking tray in an even layer. Bake in a preheated 425 °F, 220 °C. oven until golden and tender. About 35-40 minutes.

Cook the Chicken Souvlaki: Preheat the air fryer to 400 °F, 200 °C for 5 minutes. Add enough skewers to fill the basket in an even layer. Do not stack them on top of each other. Air fry them for about 6-7 minutes per side. The chicken is cooked when the internal temperature reaches 165 F. Transfer the skewers to a platter.

Make the rice.

Serve the chicken souvlaki skewers over rice with the potatoes and tzatziki sauce.

Great! Dimitra > but get a cheap: Bomann DVG 3006 CB or sortlike gyros/souvlaki maker, it's way better than airfrying. make your gyros with the metal pins and make a smaller width. you can even do a big one what i prefer in the center. you know gyros souvlaki won't turn in an airfryer. if you look at grill philosophy those guys are great but they have to much Gluten in there herbs. i can't eat that.

I dont understand what I do wrong with potatoes, or if my oven is crazy. I have my potato in 356 F (180 C) for 35 minutes. Then they go too burnt. It was the same with TWO stove I had before this. If I want to make bigger bits, like bigger wedges, I have to lower temp.

Is it due to me using non starchy potatoes? But in my country that is the normal to use, and all recipes is for the same high temp an long tine that I never succeeded without it getting black or start burning.
