How can you extrapolate with endothermic graph?

Hello, I have recently come across a question where the first temperature taken after the reaction has completed is 33.5 but then the next temperature is 37.5 leading to quite a big jump. What would I do then? Thank you.

Does that mean the graph must always be a straight line graph?

Stupid question but, why did we extrapolate till 4? What if I extrapolated at 5?

I still don't really understand why we don't take the temperature at the 4th minute? Does that affect our end result in any way? :/
