I used to be afraid to cook new things because I didn’t have all of the ingredients or utensils or machines. But watching FutureCanoe make a breakfast sandwich video where the first sandwich isn’t even a breakfast sandwich reminds me that I don’t have to be perfect and I can do things without letting perfectionism hold me back. It’s really uplifting. Also, omg, I learned about the BetterHelp scandal from the comments section. Such a weird way to stay informed 😂

I am a proud Filipino, so here is our Pancit Bihon <33
(hope you can get all the ingredients ;-;)
Ingredients:

- 250g bihon (thin rice noodles)
- 2 tablespoons cooking oil
- 3 cloves garlic, minced
- 1 small onion, sliced
- 1/2 cup sliced chicken breast or pork belly (you can also use shrimp)
- 1 cup sliced cabbage
- 1 medium carrot, julienned
- 1/2 cup sliced green beans
- 1/2 cup sliced bell peppers (red and green)
- 2 tablespoons soy sauce
- 1 tablespoon fish sauce (optional)
- 3 cups chicken broth or water
- Salt and pepper to taste
- Calamansi or lemon wedges (for serving)
- Chopped green onions for garnish (optional)

Instructions:

1. Prepare the noodles according to package instructions. Usually, you need to soak them in warm water for about 10 minutes until they soften, then drain them and set aside.

2. Heat the cooking oil in a large pan over medium-high heat. Add the minced garlic and sliced onion, and sauté until fragrant and the onion becomes translucent.

3. Add the sliced chicken or pork belly to the pan, and cook until browned and cooked through.

4. Once the meat is cooked, add the sliced vegetables (cabbage, carrots, green beans, and bell peppers) to the pan. Stir-fry for a few minutes until the vegetables start to soften.

5. Push the meat and vegetables to the side of the pan, and add the softened bihon noodles to the empty space. Pour the soy sauce and fish sauce over the noodles, and gently toss to combine with the meat and vegetables.

6. Gradually pour the chicken broth or water over the noodles, meat, and vegetables. Allow the noodles to absorb the liquid and cook until they are soft but still firm to the bite, stirring occasionally. If the noodles are too dry, you can add more broth or water as needed.

7. Season with salt and pepper to taste, adjusting the flavor according to your preference.

8. Once everything is cooked and the noodles are soft, remove the pan from the heat.

9. Serve the Pancit Bihon hot, garnished with chopped green onions and accompanied by calamansi or lemon wedges for squeezing over the noodles.

I'm from the US, but my German grandma always used to make this cabbage and noodle dish called Haluski. It's super easy and super good. You take one large onion and dice it, and one head of cabbage and shred it. You cook the onions and the cabbage in 1/2 cup butter until the onions are golden brown. While you cook the onions and cabbage, boil one package of egg noodles until slightly underdone. When the onions and cabbage are browned, add the drained noodles, a bit more butter, and salt and pepper to taste. Fry for a minute or two, and then eat! It is such a comforting dish, and surprisingly complex for so few ingredients! Thanks for making such fun videos!
