California has the best regulations when it comes to producing REAL olive oil. Get a bottle that has a California Olive Oil Council stamp of approval. They have stricter requirements for extra virgin olive oil than both domestic and international regulations.

Must be in glass or metal container.
Must have a harvest date and exp date. Real good olive oil only keeps its freshness for a year. Etc etc etc

The end there? Bullshit. Extra virgin olive oils are naturally a little bitter. That's one of the reasons (besides cost) they blend them with canola, etc.
