5 INGREDIENT POWER COOKIES RECIPE
1.5 cups almond meal/flour
1/4 cup maple syrup
1/4 cup coconut oil
1/4 cup sunflower seeds (unsalted)
1/4 cup mini chocolate chips
*optional: pinch of kosher salt

Pre heat oven to 350º F.

Line a rimmed baking sheet with parchment paper or a silat mat and set aside.

In a large bowl, combine almond flour, maple syrup, coconut oil, sunflower seeds, chocolate chips and salt (if using). Mix until a dough has formed.

Scoop a heaping tablespoon of dough and roll into a ball, then flatten with into a cookie shape. These cookies don’t spread so you want to create the cookie shape before baking.

Place on baking sheet and repeat until you have used all of the dough (you should end up with 12 cookies).

Bakes for 15 minutes or until golden brown and cooked through. Cool and enjoy!

PB+J ENERGY BITES RECIPE
1 cup rolled oats
1/4 cup chia seeds
1/4 cup ground flax seeds
pinch of kosher salt
1/2 cup natural peanut butter
1/4 cup maple syrup
1/3 cup dried cherries, chopped

Combine all ingredients in a large bowl and gently mix together until they are well combined and you have a thick dough.

Scoop a heaping tablespoon of the dough into the palms of your hand and roll into a ball. Place on baking tray and repeat until you have used all the dough (you should have 15 energy bites).

Store in an air tight container in the fridge for up to 10 days. Enjoy!

Makes 15 energy bites.

I made these tonight with my nieces and I have to say they were so quick and easy (thank goodness!), and I could barely get the cookies on the sheet to bake! The dough tastes so good before baking the girls couldn’t stop sneaking little bites. The fact that the ingredients are completely safe to eat raw is a win win! We substituted chia seeds for sunflower since it’s what I had on hand. Thanks for the quick treat!

And thanks for your easy and healthy recepies, I made the cookies today. I didn't have almonds, so made haselnut flour, and used walnuts instead of sunflower seeds, and sesameseeds instead of flaxseeds. They are amazing 😍👏

Oh my goodness, these Power Cookies are divine. Just finished cooking my first batch thismorning. Hidden them from my son as I know they will all simply disappear. Made the cookies and they were so delicious! I used oat flour as the base and i added raisins instead of the choco chips! Thanks for the recipe!

We used pecans in the recipe instead of sunflowers seeds and it tasted amazing

Just made these..I used almond extract..and walnuts didn't have enough almond flour so I used half cup of Bob mills gluten free flour and just a little bit of smashed banana really yummy!!

substitute sunflower seeds with pumpkin seed which when baked or toasted adds an incredible nutty yummm

I made the 5 ingredient cookies and they were AMAZING. My first time baking with almond flour & it was super delicious. My husband loves cookies, so glad I made some healthy ones :D

I can’t wait to try these energy balls. I make something similar for my kids (and myself). My daughter dances right after school 4 days a week so I need a quick and healthy snack for her. It’s surprising how 1 ball is satisfying enough to tide me over as a snack from my lunch until my dinner. I’ll try this recipe this week.
