BTW, those chicken skins ... When I make a chicken curry, I do use the thighs, deboned, skin off, cut up and into the pot. But prior, I fry the skins with a bit of salt to render the fat. (Trust me, once the skins come up crunchy, have a bite ... you'll forget about crisps.) Depending on the amount of fat that's rendered, I might take some out of the pot, but what's left becomes the starting point for a flavour-packed curry. Also, instead of adding salt during the cooking process, I crush up the crispy skins and use that as part of the seasoning.

If, as an italian, I can give you an advice, is to try the pappardelle with a wild boar ragù, you make it as a normal ragù but using wild boar instead of beef (as a butcher I think you can find it easily), you brown onion, celery and carrot, you add the wild boar minced meat, you brown it, you add a glass of red wine, you put the tomatoes (if canned, it's better if you use peeled tomatoes than tomato sauce) add salt and you cook it very slowly for 3 hours (don't use any herb and absolutely don't add any cream). Wild boar sauce is considered the best pairing with pappardelle here in italy.

I have some glorious leftover chicken thighs, which I did with mushrooms and marinated artichoke hearts.  I'm going to use them in this recipe tomorrow night.
