Creamy Chicken & Bacon Pasta 

Ingredients - 

Bacon, Chicken and seasoning - 

6 - Streaky Bacon Rashers 
1 Tbsp (20ml) - Olive Oil 
2 - Small Chicken Breast, Butterflied 
1 tsp (3g) - Onion Powder 
1 tsp (3g) - Garlic Powder 
1 tsp (3g) - Smoked Paprika 
Salt & Pepper 

Pasta & Sauce - 

350g (12.3oz) - Bucatini or Pasta of Choice 
1 Tbsp (14g) - Unsalted Butter 
2 tsp (10ml) - Olive Oil 
1 - Red Onion, Fine Diced 
6 - Garlic Cloves, Chopped
5g (0.2oz) - Flat Leaf Parsley 
1 Cup (250ml) - Chicken Stock
200g (7.05oz) - Creme Fraiché 
Parmesan Cheese or Pecorino Romano 
Flat Leaf Parsley & Basil To Serve 
Salt & Pepper 

Method -

1. Bring a pot of salted water to a boil and cook for 1 minute less than the packet instructions. 

2. Add the butterflied chicken to a bowl, along with the oil, seasonings, salt, and pepper. Mix well to combine. 

3. Dice the bacon into medium-sized pieces. Place a pan over medium-high heat and add the bacon. Fry for 3-4 minutes or until the fat has rendered and the bacon is golden and cooked to your liking. Remove from the pan and set aside. 

4. In the same pan over medium-high heat, add the Chicken and sear for 4 minutes on each side or until cooked through (internal temp (74.c-165.f). Remove, rest for 5 minutes, and slice or dice. 

5. In the same pan again, back over medium heat, add the red onion and sauté for 4 minutes or until transparent. Add the garlic and cook for 1 minute. Increase heat to medium-high, deglaze with chicken stock, and reduce by 1/3. Add flat leaf parsley and creme fraiché. Check seasoning, mix to combine, and simmer for 4-5 minutes or until thick. 

6. Add in the cooked bacon, Chicken and pasta and mix well. Grate in parmesan or pecorino Romano cheese and mix thoroughly. 

7. Serve in bowls and garnish with flat-leaf parsley, basil, more cheese, and cracked black pepper. Dig in.

Indian here living in the UK and gradually learning to cook on my own. I regularly make your creamy garlic lemon pasta which is an absolutely amazing dish (even cooked it for my mother when I visited her in India...and she was over the moon).
Today I made this for dinner and, to be honest, it was the most delicious non-vegetarian meal I have ever had in my life! Chef, I consider you my teacher and thank you from the bottom of my heart for teaching me how to cook.

If I'm unable to find Creme Fraiché, Can I subtitute it with Heavy Whipped cream instead? If so the same measurment amount 200g (7.05oz) . Thanks for sharing

Does adding the creme fraiche to a hot pan risk making it separate? I've found that adding dairy like cream to a hot pan for a sauce risks making it curdle.

I have a question. As someone whose family doesn’t eat pork, when substituting turkey bacon in for this (or similar recipes) where you’re meant to render out the fat, how would you replicate this? Since turkey bacon doesnt seem to produce nearly the same amount that normal bacon does.
