It follows that on one hand there is a sizable market for digitally removing analogue film artefacts from twentieth century film. And on the other hand there is a scramble to have modern video look like "old" film; presumably because much high-end videography is antiseptic and lifeless?

Most Film grain is over done to death these days. If the grain was as prevelant on film as it is in the digital versions we have today, film's would of been unwatchable on a big screen. Grain is mostly added for copy protection as it makes the compression harder, not for artistic resaons as you are being lead to believe.
